My husband and I recently drove from Florida to my home state of Indiana. We had to have chosen the perfect week, Oct. 17-25. The leaves were in their full array of colors, and I am certain my husband tired of my “oohing and ahhing” at the beauty that our God created.
We were also blessed to have chosen exit 348 in Ringgold and our stay at the Holiday Inn Express. We delighted in resting very comfortably for a night. However, before retiring for the evening, my husband asked the clerk at the registration desk where we could find a good restaurant. He suggested Aunt Effie’s across the street. For the local folks in this area, well, end of story. However, for those who are not familiar with Aunt Effie’s, it is casual dining in a clean, casual atmosphere, with friendly servers and staff, and the food was delicious.
This is not the kind of food one usually eats while traveling. This is not the home-cooking anyone would ever expect while on the road. My husband and I both ordered a pork chop with turnip greens and mashed potatoes and gravy, along with rolls and cornbread. What a pleasant surprise to enjoy such a delicious, home-cooked meal while traveling..
Well, we had to return to Florida and arranged to stay in Ringgold a second time to experience another delicious meal at Aunt Effie’s. This time, I ordered ham, and my husband had the fried chicken. It was another delicious meal and a great memory of Aunt Effie’s in Ringgold, and I am looking forward to traveling again.
